Cool Cucumber Salad
FOR THE SALAD
6-8 Pickling cucumbers sliced ribbon thin on your Mandolin or with your spiraler.
1/4 red onion finely sliced
1/4 cup dill weed
FOR THE DRESSING
3/4 cup organic greek whole milk yogurt
2 tbsp olive oil
1 pinch of garlic blossoms
1 tbsp lemon juice freshly squeezed
1/4 tsp sea salt
1/4 tsp fresh ground black pepper
Mix the dressing ingredients in a bowl and allow to sit in the refrigerator for at least 20 minutes.
Place cucumbers, onion and dill in a bowl. Pour the dressing over them, toss well and garnish with extra dill and more pepper as you choose. I will often crumble some feta over the top if I happen to have some in the fridge.
