Cool as a Cucumber


Cool Cucumber Salad

INGREDIENTS 

FOR THE SALAD

  • 6-8 Pickling cucumbers sliced ribbon thin on your Mandolin or with your spiraler.

  • 1/4 red onion finely sliced

  • 1/4 cup dill weed

FOR THE DRESSING

  • 3/4 cup organic greek whole milk yogurt

  • 2 tbsp olive oil 

  • 1 pinch of garlic blossoms

  • 1 tbsp lemon juice freshly squeezed

  • 1/4 tsp sea salt

  • 1/4 tsp fresh ground black pepper

METHOD

Mix the dressing ingredients in a bowl and allow to sit in the refrigerator for at least 20 minutes. 

Place cucumbers, onion and dill in a bowl. Pour the dressing over them, toss well and garnish with extra dill and more pepper as you choose. I will often crumble some feta over the top if I happen to have some in the fridge.

Cucumbers contribute to healthy recovery in other ways. They can help you maintain healthy blood pressure levels and It's an excellent source of the chemical compound silica, which helps the body re-grow connective tissue in the muscles, ligaments, tendons and other tissues.

The addition of yogurt into your diet can help reduce the replication of viruses as well!
